Sandwiches are for weekends, and that sucks. I love sandwiches. But sometimes you gotta break the rules. And these grilled mahi-mahi sandwiches are the perfect reason to bend them a little.
They couldn’t be simpler, and they really aren’t thaaaat bad for a weeknight meal.
All you need:
- 6 oz mahi-mahi fillets (one per sandwich)
- Blackened or cajun seasoning
- Extra virgin olive oil
- Brioche buns
- Red onion
- Romaine lettuce
- Sir Kensington's Chipotle Mayo
Basically all you have to do is brush the mahi-mahi with the olive oil, season with the cajun spice, grill it and indulge. I love the softness and buttery taste of a brioche bun with the kicked-up fish. Throw the chipotle mayo on them after toasting on the grill, and you have yourself a meal. (Sir Kensington's condiments are GMO-free and super delish.)
And if you put lettuce, tomato and onion on it, it's basically a salad.
To keep it fresh, we made an actual little side salad. Just slice up some more red onion, halve orange grape tomatoes, slice up cuc, crumble some feta (critical) and toss it all in red wine vinegar and olive oil. Easy and refreshing and a nice balance to the semi-spicy sandwich.
Season with sea salt and fresh cracked pepper. The feta makes the salad a little creamy and indulgent. Yum!
Obviously pour a giant glass of rosé with it for balance.
