Recipe: Creamy Avocado Shallot Dressing

April 21, 2015

In order to protect those I love, all of the names in this story have been changed.*

One of my best friends, Katie, doesn't like mayonnaise. This is an issue between us, but I assure you, we have remained close despite this huge roadblock. With her anti-mayo mindset, she started exploring the world of vegenaise. "Why do you like vegenaise if you don't like mayonnaise?" I asked her. "Isn't it just a reinterpretation gone gross?" I think she countered, but I blocked it out because I never actually wanted to hear the truth.

The other weekend we had dinner at her adorable home (with her precious little baby Will whom you can stalk via my Instagram), and she whipped up a delicious dressing with vegenaise. So now I'm a believer. I can't remember exactly what she did (whoops: margs + wine), but I know it involved fake mayo and shallots, and it inspired me to make my own version. Please don't think this means I am abandoning mayo. That will never happen. I honestly wish I hated it, because it would save me calories both past and future. Perhaps in a time far from now, I will become pregnant and averse to this incredible condiment. Until then, I will attempt to resist, but will fail miserably.

With that, here is my recipe for a quick and easy creamy avocado dressing. Because this dressing has a lot of acid from the lemon and cider vinegar, it works great with kale. Part of what makes kale so healthy and good for us is because it is so fibrous. Read: rough. So to break through that strong exterior, you'll need a significant amount of acidity. I myself love a tangy dressing, but the avocado and vegenaise do a great job of balancing that kick.

Have you tried vegenaise? Hate it or love it (the underdog's on top)?

*No names have actually been changed in this post. Katie dislikes mayo and it needs to be publicly addressed.(Love you, Kate!) Also, her baby's name is Will and he is the cutest.

Elodie is ONE YEAR old! This year, she changed our world forever. She broke down our walls without saying a word. She taught us how to be more patient and to trust the process. We set records with the amount of tears and laughter. And she made us new people in an instant. Elodie is the best little girl for us, and we cannot imagine life without her. HAPPY BIRTHDAY, MONK! 🧁
Elodie is ELEVEN months old! This little Chatty Cath is getting more mischievous by the day. She shakes her head no all the time then gives kisses to butter us up. She also gives high fives, is sort of dancing, and signs “all done”, but hasn’t the slightest clue what it means. She’s cautiously wobbling around on her toes while keeping us on ours!
2018 was the most exciting, emotional, challenging and rewarding year of my life. This little lady has changed me forever and brought me more happiness than I thought possible. She made sure she finished the year with a bang and took her first steps last night! So excited for what the next year holds!
