One of my best friends, Katie, doesn't like mayonnaise. This is an issue between us, but I assure you, we have remained close despite this huge roadblock. With her anti-mayo mindset, she started exploring the world of vegenaise. "Why do you like vegenaise if you don't like mayonnaise?" I asked her. "Isn't it just a reinterpretation gone gross?" I think she countered, but I blocked it out because I never actually wanted to hear the truth.
The other weekend we had dinner at her adorable home (with her precious little baby Will whom you can stalk via my Instagram), and she whipped up a delicious dressing with vegenaise. So now I'm a believer. I can't remember exactly what she did (whoops: margs + wine), but I know it involved fake mayo and shallots, and it inspired me to make my own version. Please don't think this means I am abandoning mayo. That will never happen. I honestly wish I hated it, because it would save me calories both past and future. Perhaps in a time far from now, I will become pregnant and averse to this incredible condiment. Until then, I will attempt to resist, but will fail miserably.
With that, here is my recipe for a quick and easy creamy avocado dressing. Because this dressing has a lot of acid from the lemon and cider vinegar, it works great with kale. Part of what makes kale so healthy and good for us is because it is so fibrous. Read: rough. So to break through that strong exterior, you'll need a significant amount of acidity. I myself love a tangy dressing, but the avocado and vegenaise do a great job of balancing that kick.
